Creamy Crock Pot Potato Recipe

This crock pot potato recipe can easily be doubled and is great for potlucks.  You can definitely please a crowd with this rich and creamy potato side dish.  Don't worry about leftovers from this easy crock pot casserole recipe, there won't be any! 

• 2 pounds small red potatoes, washed and quartered
• 1 package (8 ounces) cream cheese, softened
• 1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
• 1 envelope ranch salad dressing mix

Place potatoes in a crock pot.  In a small mixing bowl, beat cream cheese, soup and salad dressing mix until blended.  Stir into potatoes.  Cover and cook on low for 8 hours or until potatoes are tender.

 Serves 4 - 6
