Chunky Pork Chili

Chili lovers can't resist this combination of spicy tomato base, pork and beans. Complete the meal with cheesy corn bread.

  • 2 pounds lean pork boneless loin - cut into 3/4-inch pieces
  • 1 large onion - chopped (1 cup)
  • 2 cloves garlic - finely chopped - or 2 teaspoons garlic powder
  • 1 15 ounce can black beans - rinsed and drained
  • 1 15 ounce can chunky tomato sauce
  • 1 10 ounce can diced tomatoes and green chilies
  • 1 cup water
  • 1-1/2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Mix all ingredients in 3 1/2- to 6-quart slow cooker.

Cover and cook on low heat setting 8 to 10 hours (or high heat setting 3 to 5 hours) or until pork is tender.

To Serve: Pass bowls of shredded Cheddar cheese, chopped avocado, sliced jalapeno chilies, chopped onion, sliced ripe olives, chopped fresh cilantro and sour cream.

Yield - 6 servings
