Slow Cooker Pork Carnitas
These Mexican roll-ups are full of tender, cooked pork spiced with taco seasoning. Add your
favorite toppers, such as tomato, lettuce and cheese. A healthy, low fat meal!
- 1 pork roast (3-4 lbs.)
- 1 package taco seasoning mix
- 2 cloves garlic, crushed
- Juice of one lemon
1 package flour tortillas
Garnishes: Shredded lettuce, chopped tomatoes, shredded cheese, salsa, sour cream,
avocados, etc.
Place roast in slow cooker. Add taco seasoning, garlic, lemon juice. Add about 1 cup of
water. Cover and cook until tender (about 6 hours on high, 10 hours on low.) Remove meat and shred.
Heat tortillas on griddle until hot, but not brittle. Place shredded meat on each tortilla;
add garnishes and enjoy!
Yield - 6 to 8 servings
